Ukrainian Waffle Cake
For those who don’t know me, Ukraine has become my second home. It’s not just because of the beautiful landscapes or rich culture, but because of the people—friends who have become family.
I’ve been fortunate to visit this incredible country more than10 times, including a few visits during Christmas. During the festive season, one of my favorite treats to indulge in is the traditional Ukrainian waffle cake. This dessert is a staple in cafés and stores around this time and is beloved for its simplicity and flavor.
The recipe only requires three main ingredients: waffle sheets, dulce de leche, and butter. Finding the wafers might be the trickiest part, but you can often locate them in Polish or Eastern European stores. If you love an easy-to-make, nostalgic dessert, this one’s for you!
Ingredients
- 1 package plain wafers (round or square, 9 layers, 9-inch diameter)
- 1 can (14 oz) cooked sweetened condensed milk (dulce de leche)
- 60 grams butter, softened
Instructions
- Combine the dulce de leche and softened butter. Using a hand mixer, beat the mixture on high speed for about 3 minutes until smooth and creamy.
- Lay one waffle sheet on a flat surface and spread a thin layer of the cream evenly, making sure to cover the edges. Repeat with the remaining wafers, layering them as you go. You can make one tall cake or two smaller ones depending on your preference.
- Once assembled, place the cake under a press to set. You can use a heavy cutting board or a similar flat surface and weigh it down with a bowl of water. Let it sit for at least 2 hours.
- After pressing, slice the cake into small squares or triangles and serve.
